This classic racy, fresh, floral and white fruited Albariño comes from small almost garden sized vineyards close to the wild Galician coast, grown on granitic soils at only 20m above sea level. Some of the vines are over 70 years plus of age and many are from ungrafted rootstock, not strictly legal due to anti-Phyloxera laws, but all adding to the complex flavours. The vineyards are constantly buffeted by the sea breezes tempering the summer warmth helping maintain the fresh acidity and dusting the vines with salt giving a saline edge to this extremely attractive wine. Gentle pressing means the yields are low and a 10 day maceration on the skins increases flavours and aromatics before another gentle press and fermentation in stainless steel with a further 20 days on its lees which adds to the texture and length.
