This important Domaine was founded in 1900 and is now run by 4th generation Thierry Pillot who started working with his father Paul in 1999 before taking over in 2004. Thierry’s Bourgogne Chardonnay comes from two parcels of organically farmed 35+ year old Chardonnay vines; 40% planted in Chassagne-Montrachet, 60% in a stony site in Remigny a small hamlet between Chassagne and Santenay. He ferments with indigenous yeast and ages the wine in 350L barrels (10% new) for 12 months + 6 months in tank before bottling.
With nicely balanced oak, cool red apple with hints of peach fruit and fresh acidity this is a classy white burgundy drinking beautifully.
